Protein Packed Pumpkin Muffins

Recipe Yields 12 Muffins- 145 Calories Each


  • 1 1/2 Cup Kellog's All-Bran Cereal
  • 1/2 Cup of Almonds, Roughly Chopped
  • 1 1/4 Cup of Milk
  • 1 Egg
  • 1/3 Cup Pumpkin Puree
  • 1 1/4 Cup Flour
  • 1/2 Cup of Sugar
  • 1 TBSP of Baking Powder
  • 1/2 TSP of Salt


Preheat oven to 400 degrees

Combine and stir together flour, sugar, baking powder, and salt. Set aside. 

In large mixing bowl, combine the All-Bran and milk. Let mixture stand for 6 minutes or until the cereal softens. 

Once the cereal is soft, add egg and pumpkin. Beat well. 

Add flour mixture, stir only until combined. 

Portion batter evenly into a twelve 2 1/2-inch muffin pan that is coated with cooking spray.

Cook at 400 degrees for 20 minutes or until baked evenly.
